You know those meals you really miss, with melted cheese, pure comfort food and something that becomes a distant memory when you have a dairy allergy?
Well, there is hope, Amy’s Kitchen have created a ready meal, called Dairy Free Rice Macaroni with dairy free cheeze. Make sure you get the right product name as they also make a gluten free version called ‘Amy’s Rice Mac and Cheese’ that has real milk, cream and cheese in it. Not a mistake you want to make. The word ‘rice’ in the title might make you think it’s made with rice milk/cheese but it is definitely not suitable for anyone with a dairy allergy.
The dairy free one is gluten and soya free too and it’s actually quite tasty.
It’s nothing like real macaroni cheese.
I’m not going to promise you the earth, we all know that dairy free cheese doesn’t quite cut compare.
But, if you have a dairy allergy and can’t have ready meals and want something that is filling, really very tasty considering it’s not real cheese, this is great for those days when you just can’t face preparing yet another meal from scratch.
What’s in it and what does it really look like?
Ingredients are as follows:
No Trans Fat/No Added MSG/No Preservatives, (Vegan) Organic rice pasta (organic rice flour, water), filtered water, DaiyaTM Vegan Cheddar-Style Cheeze (filtered water, tapioca and/or arrowroot flour, expeller pressed high oleic safflower oil, coconut oil, pea protein, salt, inactive yeast, vegan natural flavors, vegetable glycerin, xanthan gum, citric acid, annatto), organic expeller pressed safflower and/or sunflower oil, organic sweet rice flour, sea salt, nutritional yeast, mustard powder.

While the meal was cooking in the oven I prepared some delicious spinach to go with it which was very tasty.
Usually I’m in a rush and scoop it straight from the packaging before I even remember to take a photo. It takes about 5 minutes in the microwave and 10-15 minutes in the oven.
I think it’s nicer done in the oven but that’s just preference.
