I just thought I’d share my lunch with you today because it looks so pretty and tastes amazing. I had no idea what to have and since lately gluten and wheat have been giving my terrible stomach cramps, bloating and constipation I’m now going totally gluten free.
This on top of already being nut and dairy free due to allergies and also tomato and celery free due to nasty reactions.
Ideas for an interesting, tasty lunch when you can’t just throw together a sarnie are tough. I had no idea what was in store when I approached the fridge, I have to say with some trepidation. The lunch disappointment when you arn’t prepared is so disheartening.
Today, however, there were lovely surprises in store. Am I the only one with short term fridge content memory? First of all was last night’s quinoa left overs. I also found some watercress that needed eating, left over sweetcorn and some peppered mackeral.
I mixed this in a bowl with a drizzle of olive oil and a sprinkling of nori flakes and I can hardly wait to try it.
